Sourdough storage
Dehydrated sourdough starter can be stored for several months without any issues in a tightly closed container.
Fresh sourdough starter can be kept in the fridge in a closed jar between baking sessions, or on the counter at room temperature if you bake bread every day.
- In the fridge with a feeding 1x/week
- On the counter with daily feedings (it all depends on the ratio of starter/flour/water used for the feeding; with 1:1:1 it will rise very quickly, with 1:4:4 it will take longer). Watch out for waste, as you "discard" starter with every feeding. This is a mandatory step, otherwise the starter becomes too acidic. There are recipes for using up excess starter.
